My favorite seasoning for making easy one pot meals like this curry soup is Yellow Curry Spice. This Indian seasoning consists of spices such as cumin, coriander, turmeric, and fenugreek. Other flavors you might find in yellow curry include garlic, lemongrass, cayenne, and cinnamon.
These lovely spices add to the savory flavors of this vegetarian ramen recipe. Another ingredient I love in this curry soup is miso paste. This seasoning is a traditional Japanese paste made by fermenting soybeans with salt. It provides an earthy sweet and salty taste.

One Pot Vegetarian Curry Ramen
This vegetarian soup is healthy, delicious, and vegetarian!
- 4 cups vegetable broth
- 13.5 oz coconut milk (in the can)
- 1 tbsp sesame oil
- 1 tbsp miso paste
- 3 tbsp minced ginger
- 1 tsp lime juice
- 1 tsp soy sauce
- 2 tbsp yellow curry spice
- 6 large eggs
- 1 cup chopped spinach
- ¾ cup green beans
- ¾ cup cherry tomatoes (sliced in half)
- 6 oz ramen noodles

Start by combining the vegetable broth and coconut milk in a large cooking pot and bring to a simmer

Add the sesame oil, miso paste, ginger, soy sauce, lime juice, and seasoning. Whisk them into the simmering broth

Toss in the noodles and once they begin to losses up poach the eggs inside the broth

After 2 minutes add the vegetables into the broth as well and continue to simmer the soup for another 2-3 minutes

Remove the soup from the heat
