One Pot Vegetarian Curry Ramen

I adore easy one pot meals like this vegetarian ramen recipe. That’s because it’s simple, flavorful, and healthy. Curry soup with ramen noodles, vegetables, and poached eggs is perfect for any meal of the day and any season of the year!

My favorite seasoning for making easy one pot meals like this curry soup is Yellow Curry Spice. This Indian seasoning consists of spices such as cumin, coriander, turmeric, and fenugreek. Other flavors you might find in yellow curry include garlic, lemongrass, cayenne, and cinnamon.

These lovely spices add to the savory flavors of this vegetarian ramen recipe. Another ingredient I love in this curry soup is miso paste. This seasoning is a traditional Japanese paste made by fermenting soybeans with salt. It provides an earthy sweet and salty taste.

Poaching the eggs directly inside this vegetarian ramen recipe allows all the flavors to seep into them. This cooking method is also a lot simpler because you don’t need multiple pots and pans. Easy one pot meals like this are my favorite.

They make for easy cooking and quick clean up. Furthermore this vegetarian ramen recipe only requires some simple store bought ingredients. Ingredients include vegetable broth, coconut milk, 1 tbsp sesame oil, and 1 tbsp miso paste.

More ingredients you will need for this curry soup include minced ginger, yellow curry spice, and lime juice. Don’t forget soy sauce, large eggs, and chopped spinach. Also green beans, cherry tomatoes, and your favorite ramen noodles.

If you don’t love green beans or spinach you can always replace with something like baby boy choy or snap peas. Other tasty vegetables that work nicely in this vegetarian ramen recipe include sprouts, corn, or even cabbage!

One Pot Vegetarian Curry Ramen

This vegetarian soup is healthy, delicious, and vegetarian!

  • 4 cups vegetable broth
  • 13.5 oz coconut milk (in the can)
  • 1 tbsp sesame oil
  • 1 tbsp miso paste
  • 3 tbsp minced ginger
  • 1 tsp lime juice
  • 1 tsp soy sauce
  • 2 tbsp yellow curry spice
  • 6 large eggs
  • 1 cup chopped spinach
  • ¾ cup green beans
  • ¾ cup cherry tomatoes (sliced in half)
  • 6 oz ramen noodles
  1. Start by combining the vegetable broth and coconut milk in a large cooking pot and bring to a simmer

  2. Add the sesame oil, miso paste, ginger, soy sauce, lime juice, and seasoning. Whisk them into the simmering broth

  3. Toss in the noodles and once they begin to losses up poach the eggs inside the broth

  4. After 2 minutes add the vegetables into the broth as well and continue to simmer the soup for another 2-3 minutes 

  5. Remove the soup from the heat 

  6. Makes 6 portions
