  • Gloves or hand sanitizers are not a substitute for proper hand-washing:

    Food handlers who do not wash hands after using the restroom may contaminate food and surfaces. Staff training on the personal hygiene program must include policies addressing critical hand practices, food handler cleanliness, proper jewelry, and nail care.

  • Use separate equipment:

    Restaurant staff must have training on how to use a separate piece of equipment for each type of food prepped or handled. This means using separate pieces of equipment, such as cutting boards and knives, for fresh produce and a separate one for poultry, seafood, and raw meat. Use separate plates and utensils for cooked and raw foods. Thoroughly wash plates, utensils, and cutting boards that held raw meat, poultry, seafood, or eggs. Keep equipment updated and clean.

  • Keep meat, poultry, seafood, and eggs separate from all other foods in the fridge:

    Train food handlers to place raw meat, poultry, and seafood in containers or select plastic bags to prevent dripping or leaking. Keep the refrigerator clean and sanitized.

  • Keep it clean:

    Wash hands and surfaces to prevent harmful bacteria from spreading throughout the kitchen. Use hot, soapy water and paper towels or clean cloths to wipe up kitchen surfaces or spills. Wash cloths in the hot cycle when washing.

Remember these same food handling practices are used to prevent food poisoning and other issues. Take training serious and keep practices and procedures seriously to prevent loss of revenue, reputation, and reduce risks.
