- When preparing foods all food handlers should follow the 4 key steps to food safety: As recomended by the FDA — Clean, Separate, Cook, and Chill.
- Wash, rinse, sanitize, and air dry food contact surfaces small-wares, utensils, food preparation surfaces, and beverage equipment after use.
- Frequently sanitize and disinfect high contact surfaces such as door push plates, walk-in door handles, equipment handles, check-out counters, and grocery cart handles, drive-thru windows,
- Prepare and use sanitizers according to manufacturer’s recommendations.
- Food Handles should keep food out of the danger zone (between 41°F and 135°F)
- Cooked foods should reach the proper internal cooking temperatures prior to service or cooling.
- Food Handlers should follow proper cooling procedures.
- Cut items down to smaller pieces
- Put is shallow pans
- Use ice bath or ice paddles
- If you have a blast chiller use that
- Proper Food Handling Training and Food Handler Certifications for food employees with new or additional duties.
- Continue to use sanitizers and disinfectants for their designed purposes.
- Verify that your washing machines are operating at the required wash and rinse temperatures and with the appropriate detergents and sanitizers PPM levels are being met.

A food handlers card (also commonly referred to as a certificate, card, or permit) is used as documentation to prove to employers and/or health departments that you have completed a food safety course that is approved and/or recognized by your city, coutny, or state Health Authority. It is valid for 2 to 4 years depending on your local government requirments.
This varies by employeers and city, county, and state governements. It is best to ask your employer (current or future) or Local Health Authority about when you will need to aquire your food handler card based on your employement date.

A food handlers card, permit, or certificate for your area. You will be able to print or download your food handler certificate after you have received a passing score on the final exam. You will also be emailed a PDF a copy of your certificate to the email address you provided so please check your inbox and/or spam box also.
