  • 2 ea Eggs
  • ¾ cup Evaportaed Milk
  • ½ cup Coconut Oil
  • 2 tsp Vanilla Extract
  • 1 tsp Melted Butter
  • 3 tsp Cocoa Powder
  • 1 cup Flour
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • ¾ tsp Ground Cinnamon
  • 1 cup Grated Zucchini
  • cup Chocolate Chips
  • 1 cup Water


  • Combine eggs, sweetener, coconut oil, and vanilla extract in a medium-sized mixing bowl
  • Mix Well
  • Add cocoa powder to melted butter
  • Mix until it looks like a thick but smooth dark paste
  • Add chocolate mixture to egg mixture and stir well
  • Add flour, baking soda, sea salt, and cinnamon to the bowl
  • Mix Well
  • Fold in grated zucchini and chocolate chips
  • Add trivet and 1 cup of water to the inner pot of your Instant Pot

  • Cover with a lid to prevent evaporation
  •  Put on sauté to pre-heat.
  • Using a small cookie scoop, fill silicone muffin cups about 2/3 full. The 6-quart Instant Pot fits 16 muffin cups at a time.
  • Layer muffin cups inside inner side of Instant Pot
  • Once bottom layer is full, cover with piece of parchment paper and piece of aluminum foil. Both should be cut in a circle to the size of the inner pot
