Banana Cake

Quick and easy Instant Pot Banana Cake

  • 2 1/4 cups Mashed overripe bananas
  • 2 cups All-Purpose Flour
  • 1/4 tsp Salt
  • 1 tsp Bakind Soda
  • 1/2 tsp Nutmeg
  • 1/2 cup Butte
  • 1/4 cup White Sugar
  • 1/4 cup Brown Sugar
  • 2 ea eggs (beaten)
  • 1 tsp Vanilla
  • 1 tsp Cinnamon
  1. Mash bananas until you have 2 1/4 cups of mashed bananas. 

  2. Combine the flour, salt, baking soda, and nutmeg in a large bowl.

  3. In another bowl, cream together the butter and brown and white sugars. Then, add the cinnamon, eggs and mashed bananas, stirring until well blended.

  4. Add the banana mixture into the bowl with the flour and stir. Besure not to over stir. 

  5. Pour batter into a pan that has been sprayed with cooking spray.

  6. Insert a trivet and 1 cup of water into the Instant Pot.

  7. Cover your pan with foil then create a foil handle for the pan. You will be placing this under your pan so the handles stick up and you can remove your pan from the Instant Pot.

  8. Seal the lid and set timer to 50 minutes on manual. After 50minutes, do a quick release on the pot.

  9. Using the foil handles, remove the pan from the Instant Pot. Allowthe pan to cool on a baking rack for a few minutes, then remove the bananabread from the pan and allow it to cool further on the baking rack.

 The California Department of Public Health Food Handler’s Card The state of California recommends that individuals work in restaurants and non-restaurant facilities to complete food handing training. A California food handler card is valid everywhere in California except in Riverside, San Bernardino and San Diego counties which have pre-existing local food handler card programs. Consult with the local enforcement agencies in each of these counties to obtain information on their local food handler programs and requirements. Once you have finished your course, you may print out your certificate of completion. This certificate will serve as your California Food Handler’s Card that qualifies you to work in the food service industry in California.

California food workers who handle food must have a California Food Handler card on file with their employer within 30 days of hire. To get your card, you must complete the training and pass the exam with a 75 percent or higher. You can complete the training online with ACE Food Handler.
