- First step is to get your staff trained in food safety and food handling. Here is a link to an affordable food handler certification.
- The following states require food handler training for all employees:
- Arizona
- California
- Florida
- Illinois
- Louisiana
- New Mexico (coming soon)
- Texas
- Utah
- West Virginia
- There are a few cities in other states that have local food handler requirements
- Check with your local Health Department to be safe
- Every state requires at least one Food Safety Manager (FSM) per location (we recommend ServSafe Training)

- Review your menu and identify all TCS Foods (Time and Temperature Control for Safety)
- Make sure your menus have the proper consumer advisories for all TCS Food items
- Do you have food safety procedures for the following?
- receiving
- storage
- preparation
- cooking
- hot holding
- cooling
- re-heating
- Considerations for Safe Facilities and Pest Control
- Only work with a Pest Control Operator (PCO)
- Proper flooring with coving in food prep areas
- Is all equipment and smallwares NSF/ANSI certified?
