Green Light: The “Go” Stage
At this stage, your customer is showing no signs of impairment. They are relaxed, their speech is clear, and they are in full control of their coordination. As a server, your job is to maintain this “Green” status by pacing the service and offering water or food early.
Yellow Light: The “Slow” Stage
This is where your observation skills are tested. You might notice the first signs of intoxication we discussed in our previous guide:

Lowered Inhibitions: They become louder or more talkative.

Impaired Judgment: They start ordering drinks faster.

The Action: You must “Slow” down service. Increase the time between rounds and encourage the customer to order a meal or an appetizer to slow alcohol absorption.
Red Light: The “No” Stage
When a customer shows loss of coordination, slurred speech, or glassy eyes, you have hit the “Red Light.” Under Louisiana law (RS 26:933), you must refuse further service. Continuing to serve an intoxicated person can result in heavy fines for you and the potential loss of the establishment’s liquor license.
