The Big 9 Allergens

The 2022 FDA Food Code and the ACE Food Safety Standards recognize nine major food allergens that account for approximately 90% of serious allergic reactions in the United States. The list of major food allergens includes:

  1. Milk.
  2. Eggs.
  3. Fish (such as bass, flounder, cod, salmon, tuna, or halibut).
  4. Crustacean shellfish (such as crab, lobster, or shrimp).
  5. Tree nuts (such as almonds, pecans, walnuts, cashews, or pistachios).
  6. Wheat.
  7. Peanuts.
  8. Soybeans
  9. Sesame (added in the 2022 edition as the ninth major allergen)
